Easy Roasted Beets

Instructions
- Preheat the oven to 450°F.
- Cut the greens from the tops of the beets and trim the bottom of the stems.
- Scrub the beets under cold water, pat dry, and place in a bowl.
- Toss the beets with olive oil and salt.
- Place the beets in a baking dish and cover tightly with foil.
- Bake for about 45 minutes for medium beets or 1 hour for larger beets.
- Check if done by sliding a sharp knife into the center of the beet.
- Let cool, then peel the skins off using paper towels.
- Toss with more olive oil, salt, and pepper, and garnish with fresh herbs.
