Easy Roasted Beets

Ingredients

The beets

  • 2 pounds fresh beets

The seasoning

  • 2 tablespoons extra virgin olive oil
  • to taste kosher salt
  • to taste freshly ground black pepper
  • for garnish fresh herbs

Instructions

  1. Preheat the oven to 450°F.
  2. Cut the greens from the tops of the beets and trim the bottom of the stems.
  3. Scrub the beets under cold water, pat dry, and place in a bowl.
  4. Toss the beets with olive oil and salt.
  5. Place the beets in a baking dish and cover tightly with foil.
  6. Bake for about 45 minutes for medium beets or 1 hour for larger beets.
  7. Check if done by sliding a sharp knife into the center of the beet.
  8. Let cool, then peel the skins off using paper towels.
  9. Toss with more olive oil, salt, and pepper, and garnish with fresh herbs.
