Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Scrub the beets under running water and slice off the base and pointy ends.
- Cut the beets in half and then into wedges about ½ to ¾-inch thick.
- Place the beet wedges on the baking sheet, drizzle with olive oil, and sprinkle with salt.
- Toss to coat evenly and arrange in a single layer.
- Roast for 35 to 40 minutes, tossing halfway, until fork-tender.
- Season with additional salt if desired and serve.
