Ingredients

The beets

  • 1 ½ pounds beets

The seasoning

  • 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon fine salt

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Scrub the beets under running water and slice off the base and pointy ends.
  3. Cut the beets in half and then into wedges about ½ to ¾-inch thick.
  4. Place the beet wedges on the baking sheet, drizzle with olive oil, and sprinkle with salt.
  5. Toss to coat evenly and arrange in a single layer.
  6. Roast for 35 to 40 minutes, tossing halfway, until fork-tender.
  7. Season with additional salt if desired and serve.
