Easy Oven Roasted Beets

Ingredients

The beets

  • 2 cups beets, peeled and cut into chunks (2-3 larger beets)

The seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon table salt
  • ¼ teaspoon black pepper

Instructions

  1. Wipe excess dirt from the beets and rinse in cold water.
  2. Peel the beets and cut them into ¾-1 inch chunks.
  3. Toss the cut beets in a large bowl with olive oil.
  4. Line a baking sheet with aluminum foil or parchment paper and place the beets cut side down in a single layer.
  5. Season the beets with salt and pepper to taste.
  6. Roast in a preheated 400°F oven for 40-50 minutes until tender.
