Easy Oven Roasted Beets
Ingredients
The beets

beets, peeled and cut into chunks (2-3 larger beets)
The seasoning

Instructions
- Wipe excess dirt from the beets and rinse in cold water.
- Peel the beets and cut them into ¾-1 inch chunks.
- Toss the cut beets in a large bowl with olive oil.
- Line a baking sheet with aluminum foil or parchment paper and place the beets cut side down in a single layer.
- Season the beets with salt and pepper to taste.
- Roast in a preheated 400°F oven for 40-50 minutes until tender.
