Ingredients

The beets

  • 1 medium/large beet

The seasoning

  • 2 teaspoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 400ºF and cut a piece of tin foil.
  2. Rinse the beet, cut off the root end, and slice it into fourths.
  3. Place the beet in the center of the tin foil, drizzle with olive oil, and season with salt and pepper.
  4. Wrap the tin foil tightly around the beet and place it on a baking sheet.
  5. Roast the beet for 30-40 minutes until fork tender.
  6. Let the beet cool for 5 minutes, then peel off the skin.
