Instructions
- Preheat the oven to 400ºF and cut a piece of tin foil.
- Rinse the beet, cut off the root end, and slice it into fourths.
- Place the beet in the center of the tin foil, drizzle with olive oil, and season with salt and pepper.
- Wrap the tin foil tightly around the beet and place it on a baking sheet.
- Roast the beet for 30-40 minutes until fork tender.
- Let the beet cool for 5 minutes, then peel off the skin.
