Ingredients

The beets

  • 3 medium beets

The seasoning

  • 1 ¼ tablespoons olive oil
  • ¼ teaspoon salt
  • pinch pepper

Instructions

  1. Preheat the oven to 400ºF.
  2. Remove the greens from the beets and wash them thoroughly.
  3. Trim the tops and roots of the beets and peel off the skin.
  4. Chop the beets into chunks, about ¾ to 1 inch in size.
  5. Place the chopped beets on a large rimmed baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
  6. Toss to combine and spread the beets in an even layer.
  7. Bake in the preheated oven until tender, about 30 to 40 minutes, stirring once or twice during baking.
  8. Enjoy the roasted beets immediately or store in an airtight container in the refrigerator.
