Instructions
- Preheat the oven to 400ºF.
- Remove the greens from the beets and wash them thoroughly.
- Trim the tops and roots of the beets and peel off the skin.
- Chop the beets into chunks, about ¾ to 1 inch in size.
- Place the chopped beets on a large rimmed baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
- Toss to combine and spread the beets in an even layer.
- Bake in the preheated oven until tender, about 30 to 40 minutes, stirring once or twice during baking.
- Enjoy the roasted beets immediately or store in an airtight container in the refrigerator.
