Ingredients

The beets

  • 6 medium beets

The seasoning

  • to taste extra-virgin olive oil
  • to taste sea salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare each beet by placing it on a piece of foil.
  3. Drizzle the beets with olive oil and sprinkle with salt and pepper.
  4. Wrap the beets in the foil and place them on a baking sheet.
  5. Roast the beets for 35 to 60 minutes until fork-tender.
  6. Remove the beets from the oven and unwrap the foil.
  7. Allow the beets to cool, then peel off the skins.
  8. Slice the beets and drizzle with olive oil, seasoning to taste with salt and pepper.
