Instructions
- Preheat the oven to 400°F.
- Prepare each beet by placing it on a piece of foil.
- Drizzle the beets with olive oil and sprinkle with salt and pepper.
- Wrap the beets in the foil and place them on a baking sheet.
- Roast the beets for 35 to 60 minutes until fork-tender.
- Remove the beets from the oven and unwrap the foil.
- Allow the beets to cool, then peel off the skins.
- Slice the beets and drizzle with olive oil, seasoning to taste with salt and pepper.
