Simple Roasted Beets

Ingredients

The beets

  • 6 to 8 pieces small or medium red or yellow beets

The dressing

  • to taste none Extra-virgin olive oil
  • to taste none Sea salt
  • to taste none Freshly ground black pepper
  • 1 large navel orange
  • to taste none Sherry vinegar or balsamic vinegar
  • Juice of ½ none lemon
  • to taste none Watercress leaves, arugula, or microgreens
  • optional none Flaky sea salt

Instructions

  1. Preheat the oven to 400°F.
  2. Wrap each beet in foil after drizzling with olive oil and seasoning with salt and pepper.
  3. Roast the beets on a baking sheet for 35 to 60 minutes until tender.
  4. Allow the beets to cool, then peel off the skins.
  5. Peel the orange and slice it into segments, reserving some for squeezing.
  6. Slice the beets into wedges and place them in a bowl, keeping colors separate if using both red and yellow.
  7. Drizzle with olive oil and sherry vinegar, then add lemon juice and orange juice.
  8. Chill until ready to serve and adjust seasoning as necessary.
  9. Serve with orange segments and watercress.
