Instructions
- Preheat the oven to 400°F.
- Wrap each beet in foil after drizzling with olive oil and seasoning with salt and pepper.
- Roast the beets on a baking sheet for 35 to 60 minutes until tender.
- Allow the beets to cool, then peel off the skins.
- Peel the orange and slice it into segments, reserving some for squeezing.
- Slice the beets into wedges and place them in a bowl, keeping colors separate if using both red and yellow.
- Drizzle with olive oil and sherry vinegar, then add lemon juice and orange juice.
- Chill until ready to serve and adjust seasoning as necessary.
- Serve with orange segments and watercress.
