Ingredients

The beets

  • 2 pounds beets

The seasonings

  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon balsamic vinegar (optional)

Optional additions

  • 3 tablespoons crumbled goat cheese or feta cheese
  • 2 tablespoons grated Parmesan cheese
  • to taste chopped fresh herbs (basil, thyme, parsley, or dill)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Trim and scrub the beets, then cut them into 1- to 1½-inch chunks.
  3. Toss the beets with olive oil, salt, and pepper on the baking sheet.
  4. Roast for 30 minutes, turning halfway through.
  5. Drizzle with balsamic vinegar, toss, and roast for an additional 5 to 10 minutes until fork tender.
  6. Sprinkle with cheese and herbs before serving.
