Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Trim and scrub the beets, then cut them into 1- to 1½-inch chunks.
- Toss the beets with olive oil, salt, and pepper on the baking sheet.
- Roast for 30 minutes, turning halfway through.
- Drizzle with balsamic vinegar, toss, and roast for an additional 5 to 10 minutes until fork tender.
- Sprinkle with cheese and herbs before serving.
