Peanut Dressing

Instructions
- Combine carrots, edamame, bell pepper, cabbage, half of the green onion, and cilantro in a large bowl.
- In another bowl, whisk together peanut butter, brown sugar, soy sauce, sesame oil, Sriracha, lime zest and juice, and ginger. Adjust consistency with hot water if needed.
- Pour the dressing over the vegetables and mix well.
- Serve topped with remaining green onions, cashews, and additional Sriracha if desired.
