Ingredients

The salad

  • 1 large purple cabbage, thinly sliced
  • 2 cups shredded carrots

The dressing

  • cup peanut butter
  • ¼ cup water
  • ¼ cup coconut aminos or low sodium soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 1 lime, juiced lime
  • 2 cloves garlic

Optional toppings

  • cup chopped scallions
  • 1 tablespoon sesame seeds
  • 1 cup shredded chicken

Instructions

  1. Shred the cabbage and carrots, or add pre-shredded veggies to a bowl.
  2. In a separate bowl, whisk together all dressing ingredients until fully combined.
  3. Toss the veggies in the dressing until fully coated.
  4. Add any desired toppings.
  5. Serve immediately or store leftovers in the fridge.
