Ingredients

Thai Peanut Dressing

  • ¼ cup peanut butter
  • 1 tablespoon rice vinegar
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon tamari or soy sauce
  • 3 tablespoons honey
  • 2 cloves garlic
  • 1 inch fresh ginger
  • ¼ teaspoon salt
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons water

Thai Salad

  • 1 head romaine lettuce
  • 2 cups red or green cabbage
  • 1 cup shredded carrots
  • 3 stalks green onions
  • 1 red bell pepper chopped
  • ½ cup fresh cilantro
  • ¾ cup chopped peanuts or cashews (optional)

Instructions

  1. Prepare the dressing by whisking all peanut dressing ingredients together in a bowl or jar.
  2. Chop the vegetables and add them to a large bowl.
  3. Add half of the dressing to the vegetables and toss well, adjusting the amount of dressing to taste.
  4. Top with chopped nuts if desired, and serve immediately.
