Ingredients

The salad

  • 6 cups shredded or chopped romaine or green leaf lettuce
  • 3 cups shredded napa cabbage
  • 1 cup matchstick or shredded carrots
  • 1 cup matchstick or diced cucumber
  • 1 cup frozen shelled edamame, thawed
  • 2 tablespoons chopped cilantro
  • 1 medium sliced scallion
  • 12 oz cooked boneless skinless chicken breast, chopped
  • ½ cup peanuts

The dressing

  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons water
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sesame oil
  • 6 tablespoons PB2 powdered peanut butter
  • 1 tablespoon packed brown sugar
  • ¾ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon Sriracha

Instructions

  1. Combine all salad ingredients in a large mixing bowl.
  2. In a separate bowl, whisk together the dressing ingredients until smooth.
  3. Serve the salad with the dressing on the side until ready to eat.
