Ingredients

The dressing

  • 2 tbs. fresh minced ginger
  • ½ cup peanut butter
  • ½ cup water
  • 2 tbs. soy sauce
  • 3 tbs. hoisin sauce
  • ¼ tsp. red pepper flakes

The salad

  • to taste spinach
  • to taste pulled rotisserie chicken
  • to taste shredded/grated carrots
  • to taste bean sprouts (alfalfa sprouts)
  • to taste cilantro
  • to taste green onions

Instructions

  1. Whisk together the ginger, peanut butter, water, soy sauce, hoisin sauce, and red pepper flakes to make the dressing.
  2. Chop and mix the spinach, chicken, carrots, bean sprouts, cilantro, and green onions.
  3. Drizzle the dressing over the salad and mix well.
