Asian Chicken Salad

Ingredients

The salad

  • 1 whole rotisserie chicken, meat pulled off and shredded
  • 2 small heads Chinese green cabbage, shredded
  • 2 cups frozen peas
  • 2 large carrots, shredded
  • 2 whole cucumbers, diced
  • ½ cup chopped green onion

The dressing

  • ½ cup sweet chili garlic sauce
  • 6 tablespoons honey
  • 5 tablespoons sesame oil
  • 3 tablespoons vinegar
  • 4 tablespoons lime juice
  • 2 teaspoons wasabi paste
  • to taste crushed peanuts for topping

Instructions

  1. Cook the peas according to package directions, then drain and let cool slightly.
  2. In a large bowl, combine the chicken, cabbage, peas, carrots, cucumbers, and green onions. Toss to combine and chill for an hour.
  3. In a separate bowl, whisk together the chili sauce, honey, sesame oil, vinegar, lime juice, and wasabi paste until well mixed. Chill for an hour.
  4. Pour the dressing over the salad and toss well. Serve topped with crushed peanuts.
