Ingredients

The Salad

  • 3 cups diced cooked chicken
  • cups broccoli slaw
  • ½ medium red bell pepper
  • ¼ cup slivered or sliced almonds
  • 2 green onions chopped

The Dressing

  • ½ teaspoon orange zest
  • 1 orange juice (about 3 tablespoons)
  • 3 tablespoons coconut aminos
  • 2 tablespoons almond butter or peanut butter
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon rice vinegar
  • 1 clove garlic (minced)
  • ½ teaspoon freshly grated ginger

For Serving

  • ½ medium avocado (diced or sliced)
  • to taste cilantro, green onion, sesame seeds, and/or toasted almonds

Instructions

  1. Combine the chicken, broccoli slaw, red peppers, almonds, and green onions in a large bowl.
  2. Prepare the dressing by whisking together all dressing ingredients in a small bowl until smooth.
  3. Pour the dressing over the salad and mix until all ingredients are coated.
  4. Serve immediately in lettuce leaves, over greens, or in a wrap with avocado and garnishes.
