Asian Chicken Salad

Ingredients

The salad

  • 1/4 cup chopped green onions
  • 2–3 cups shredded lettuce or slaw
  • 1/2 cup whole almonds, chopped
  • 2 cups shredded carrots
  • 1/4 cup chopped cilantro
  • 2 cups cooked, shelled edamame
  • to taste toasted sesame seeds (optional)
  • 2 cups chow mein noodles (dry crunchy kind)

The marinated chicken

  • 2 pieces chicken breasts
  • 1/2 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 2 tablespoons sugar
  • 2 tablespoons Chinese 5 spice seasoning

Instructions

  1. Toss all salad ingredients together in a large bowl.
  2. Whisk together the soy sauce, garlic, ginger, sugar, and seasoning to create the marinade.
  3. Marinate the chicken in the sauce for at least 1 hour, then bake at 400°F for about 20-30 minutes until cooked through.
  4. Once cooled, shred the chicken and add it to the salad.
  5. Toss the salad with your dressing of choice and add the chow mein noodles just before serving.
