Ingredients

Sweet Chili Dressing

  • cup Honey
  • ½ tsp Crushed red pepper flakes
  • 1 tbsp Rice vinegar
  • 1 tbsp Water
  • 1 clove Garlic (minced)

Thai Salad

  • 3 cups Mixed greens
  • ½ medium Pineapple (peeled and cut into strips, ~2 cups)
  • 2 medium Carrots (peeled and julienned, ~1 cup)
  • 2 small Cucumbers (quartered and sliced, ~1 cup)
  • 1 large Red bell pepper (sliced into thin strips, ~1 cup)
  • 1 cup Red cabbage (sliced into thin strips, optional)
  • ¼ cup Peanuts (crushed)

Optional Garnishes

  • 1 tbsp Sesame seeds
  • ¼ cup Green onions (chopped)
  • to taste Fresh cilantro (chopped)
  • to taste Fresh mint (chopped)

Instructions

  1. Prepare the dressing by combining honey, red pepper flakes, rice vinegar, and minced garlic in a saucepan. Bring to a gentle boil and simmer until thickened.
  2. In a large salad bowl, mix together the mixed greens, pineapple, carrots, cucumbers, red bell pepper, and red cabbage.
  3. Sprinkle the crushed peanuts over the salad.
  4. Drizzle the sweet chili dressing over the salad and toss to combine.
  5. Add optional garnishes like sesame seeds, green onions, cilantro, and mint if desired.
