Spaghetti with Mushroom Bolognese

Ingredients

The sauce

  • 1 container white mushrooms
  • 3 medium carrots
  • 3 cloves garlic
  • 1 medium red onion
  • 1 tbsp olive oil
  • 2 tbsp Italian seasoning
  • 1 jar pasta sauce
  • to taste salt
  • to taste pepper

The pasta

  • 1 package pasta of choice

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add chopped red onion and crushed garlic, and stir.
  3. In a food processor, pulse the mushrooms and carrots for about 30 seconds until textured.
  4. Add the mushroom and carrot mixture to the saucepan, along with Italian seasoning, and cook for about 5 minutes.
  5. Stir in the pasta sauce and mix well.
  6. Taste and add salt and pepper as needed.
  7. Serve and enjoy!
