Spaghetti Bolognese

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 1 cup finely chopped onion
  • ½ cup finely chopped carrot
  • ½ cup finely chopped celery
  • 1 tablespoon kosher salt

  • 6-8 cloves garlic
  • ¾ pound ground beef
  • ¼ pound ground pork
  • 3 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 cup red wine
  • 28 ounces canned whole peeled tomatoes
  • cup heavy cream
  • 3 tablespoons unsalted butter
  • ½ teaspoon red wine vinegar
  • 1 pound dried spaghetti
  • ½ cup parsley
  • to taste Parmesan

Instructions

  1. Heat olive oil in a Dutch Oven and sauté onion, carrot, and celery until translucent.
  2. Add garlic and cook for a few more minutes.
  3. Add ground beef and pork, season, and cook until browned.
  4. Stir in tomato paste, sugar, and a pinch of salt, and caramelize for a minute.
  5. Add red wine and let it reduce until almost evaporated.
  6. Stir in the crushed tomatoes and cook for several minutes.
  7. Lower the heat, add heavy cream, and cook for a few minutes.
  8. Stir in butter until melted.
  9. Add red wine vinegar and adjust seasoning.
  10. Boil water in a separate pot, add salt, and cook spaghetti according to package instructions.
  11. Combine cooked pasta with the sauce, adding reserved pasta water if necessary.
  12. Serve topped with parsley and grated Parmesan.
