Instructions
- Heat olive oil in a Dutch Oven and sauté onion, carrot, and celery until translucent.
- Add garlic and cook for a few more minutes.
- Add ground beef and pork, season, and cook until browned.
- Stir in tomato paste, sugar, and a pinch of salt, and caramelize for a minute.
- Add red wine and let it reduce until almost evaporated.
- Stir in the crushed tomatoes and cook for several minutes.
- Lower the heat, add heavy cream, and cook for a few minutes.
- Stir in butter until melted.
- Add red wine vinegar and adjust seasoning.
- Boil water in a separate pot, add salt, and cook spaghetti according to package instructions.
- Combine cooked pasta with the sauce, adding reserved pasta water if necessary.
- Serve topped with parsley and grated Parmesan.
