Pasta Bolognese

Ingredients

  • 2 tbsp unsalted butter
  • 2 cups assorted mushrooms, finely chopped
  • 1 stalk celery, finely chopped
  • 1 medium carrot, finely chopped
  • 1 large garlic clove, minced
  • ½ cup walnuts, chopped
  • 680 ml jar tomato passata
  • 2 tsp vegetable stock paste
  • 1 small bay leaf
  • 1 tbsp basil
  • 1 ½ tsp parsley
  • ¾ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cinnamon
  • ½ tsp salt
  • ¼ tsp cloves
  • ¼ tsp red chili flakes
  • ½ cup mozzarella cheese, grated
  • 3 cups Spaghettini
  • ⅔ – 1 cup fresh basil

Instructions

  1. Melt the butter in a large pan over medium-high heat.
  2. Add the mushrooms and cook until golden brown and fragrant.
  3. Add the chopped onion, celery, carrot, and minced garlic, cooking until soft.
  4. Stir in the walnuts, tomato passata, vegetable stock paste, and spices, then cook to thicken the sauce.
  5. Prepare the Spaghettini according to package instructions.
  6. Rinse and strain the pasta, then mix it with the Bolognese sauce.
  7. Add grated mozzarella to the sauce and stir to melt.
  8. Serve the pasta garnished with fresh basil and optional toppings.
