Pasta Bolognese

Ingredients

The sauce

  • 1 tablespoon olive oil
  • 4 ounces pancetta, finely diced
  • 1 pound ground beef
  • ¾ cup onion, finely diced
  • ½ cup carrot, peeled and finely diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon dried Italian seasoning
  • ½ cup red wine
  • 8 ounces tomato sauce
  • 28 ounces crushed tomatoes
  • to taste salt and pepper
  • ¼ cup heavy cream

The pasta

  • 12 ounces spaghetti
  • ½ cup parmesan cheese, grated
  • ¼ cup basil leaves, thinly sliced

Instructions

  1. Heat olive oil in a large pot over medium heat and cook pancetta until browned.
  2. Add ground beef, season with salt and pepper, and cook until browned.
  3. Add onion and carrot, cooking until tender, then add garlic and Italian seasoning.
  4. Drain excess grease, then add red wine and simmer until reduced by half.
  5. Stir in tomato sauce and crushed tomatoes, seasoning with salt and pepper.
  6. Simmer sauce for 25-30 minutes until thickened, then stir in heavy cream.
  7. Cook spaghetti according to package directions, reserving some cooking water.
  8. Combine pasta with sauce, adding reserved water if needed to thin.
  9. Top with basil and parmesan cheese, then serve.
