Bolognese Sauce

Ingredients

  • 3 strip bacon, chopped
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 1 medium head roasted garlic
  • 2 teaspoons fresh thyme
  • ½ - 1 cup dry white wine
  • 1 pound ground beef chuck
  • 2 15-oz. can crushed tomatoes, with juice
  • 1 6-ounce tomato paste
  • ¼ cup chopped fresh basil leaves
  • 1 tablespoon Italian seasoning
  • 1-2 bay leaves
  • 1 cup or more beef or chicken bouillon
  • ½ cup beef or chicken stock
  • ½ cup half and half (optional)
  • 1 pound pasta, cooked and drained
  • to taste salt and pepper
  • to serve freshly grated Parmigiano-Reggiano cheese

Instructions

  1. Cook the chopped bacon in a large saucepan over medium heat until browned.
  2. Add olive oil, then sauté onions, carrots, celery, garlic, and thyme until softened.
  3. Pour in the wine and mix well, then increase heat and add minced beef, browning it until no pink remains.
  4. Stir in crushed tomatoes, tomato paste, basil, Italian seasoning, bay leaves, bouillon, and stock.
  5. Bring to a low boil, then reduce heat to simmer and cover, cooking for 45-60 minutes, stirring occasionally.
  6. If the sauce thickens too much, add more stock to thin it out.
  7. In the last few minutes, add half and half if using, and season with salt and pepper.
  8. Cook the pasta according to package instructions, then combine it with the bolognese sauce.
  9. Serve with grated Parmesan and a sprinkle of basil.
