Bolognese Sauce

Ingredients

The sauce

  • 1 ¼ pounds ground meat (turkey, beef, lamb, pork, or a mix)
  • 1 large onion (diced)
  • 6–8 cloves garlic (rough chopped)
  • 8 ounces mushrooms (sliced)
  • 2 medium carrots (diced)
  • 2 stalks celery (diced)
  • 1 ¾ teaspoons kosher salt
  • 1 teaspoon cracked pepper
  • 1 tablespoon dried oregano
  • ¼ teaspoon chili flakes
  • ¼ teaspoon ground nutmeg (optional)
  • 1 teaspoon fennel seeds
  • 3 tablespoons tomato paste
  • 1 ¼ cups red wine (or chicken or beef broth)
  • 28 ounces canned whole peeled tomatoes (preferably San Marzano)
  • 1 tablespoon soy sauce
  • 1 leaf bay leaf
  • 1 piece parmesan rind (optional)

Garnishes

  • to taste fresh basil or parsley
  • to taste grated parmesan or pecorino cheese

Instructions

  1. Sauté the ground meat and onion in olive oil for 7-9 minutes until lightly browned.
  2. Add garlic, carrots, celery, and mushrooms, and sauté until tender, about 5 minutes.
  3. Add all spices and salt, then make a well in the pan to add tomato paste and sauté for 1-2 minutes.
  4. Mix everything and add the wine, scraping up any brown bits, then let simmer until the wine is reduced by half.
  5. Add canned tomatoes and their juice, breaking them up, then stir in the soy sauce and add the parmesan rind and bay leaf.
  6. Transfer to a slow cooker on low for 6 hours or medium for 3 hours, adjusting seasonings before serving.
