canned whole peeled tomatoes (preferably San Marzano)

Instructions
- Sauté the ground meat and onion in olive oil for 7-9 minutes until lightly browned.
- Add garlic, carrots, celery, and mushrooms, and sauté until tender, about 5 minutes.
- Add all spices and salt, then make a well in the pan to add tomato paste and sauté for 1-2 minutes.
- Mix everything and add the wine, scraping up any brown bits, then let simmer until the wine is reduced by half.
- Add canned tomatoes and their juice, breaking them up, then stir in the soy sauce and add the parmesan rind and bay leaf.
- Transfer to a slow cooker on low for 6 hours or medium for 3 hours, adjusting seasonings before serving.
