Slow Cooker Bolognese Sauce

Ingredients

The meat

  • 2 lb. ground beef
  • ¼ lb. ground pork

The dairy

  • 1.5 cups 2% milk

The vegetables

  • ½ large white onion, minced
  • 1 head garlic, peeled and minced
  • 4 stalks celery, finely minced
  • 4 large carrots, finely minced

The tomatoes

  • 2 15-oz. cans crushed tomatoes
  • 1 15-oz. can diced tomatoes
  • 2 tablespoons tomato paste

The liquids

  • 1 cup dry red wine
  • ½ tablespoon Worcestershire sauce

The spices

  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • ½ teaspoon dried marjoram
  • 2 teaspoons dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon paprika
  • 2 teaspoons kosher salt
  • 1 teaspoon ground pepper
  • 2 bay leaves

Instructions

  1. Prepare the spice mix by combining all dried spices in a bowl.
  2. Partially cook the ground beef and pork in a skillet, seasoning with half of the spice mix until mostly cooked.
  3. Transfer the meat to the slow cooker and mix with milk.
  4. Sauté the red wine in the same skillet to deglaze, then add onion and garlic, cooking until translucent.
  5. Add celery, carrots, and remaining spices to the skillet, sautéing for a few more minutes.
  6. Combine the sautéed vegetables with the meat in the slow cooker, adding all the tomatoes and Worcestershire sauce.
  7. Cook on low for 6 hours, stirring occasionally.
  8. Let the sauce rest for 20 minutes before serving over pasta.
