Instructions
- Heat olive oil in a Dutch oven over medium-high heat and cook ground turkey until no longer pink.
- Add onions, bell peppers, garlic, Italian seasoning, sea salt, and black pepper, and sauté until softened.
- Pour in fire-roasted tomatoes, chickpeas, and chicken broth, and add the bay leaf.
- Bring to a boil, cover, and reduce heat to a simmer, cooking for 10-15 minutes.
- Remove and discard the bay leaf, and garnish with fresh parsley if desired.
