Ground Turkey Soup

Ingredients

The soup base

  • 2 tbsp Olive oil
  • 1 lb Ground turkey
  • 1 medium Yellow onion (diced)
  • 1 large Bell pepper (diced)
  • 3 cloves Garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • 1 14.5-oz can Fire roasted diced tomatoes (with liquid)
  • 1 15.5-oz can Chickpeas (drained and rinsed)
  • 5 cups Chicken broth, reduced sodium
  • 1 medium Bay leaf

Optional garnish

  • to taste Fresh parsley

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat and cook ground turkey until no longer pink.
  2. Add onions, bell peppers, garlic, Italian seasoning, sea salt, and black pepper, and sauté until softened.
  3. Pour in fire-roasted tomatoes, chickpeas, and chicken broth, and add the bay leaf.
  4. Bring to a boil, cover, and reduce heat to a simmer, cooking for 10-15 minutes.
  5. Remove and discard the bay leaf, and garnish with fresh parsley if desired.
