Instructions
- Heat a large pot over medium heat and spray with non-stick cooking spray.
- Add garlic, onions, carrots, and celery, cooking until the onions soften.
- Increase heat to medium-high and add the ground turkey, breaking it into crumbles as it cooks.
- Once the turkey is no longer pink, stir in the tomato paste and cook until it sticks to the pan.
- Add chicken broth, cabbage, basil, and oregano, bringing the mixture to a simmer.
- Simmer for 10 minutes, then add zucchini and cook for an additional 5 minutes until vegetables are softened.
- Season with salt and pepper to taste before serving.
