Ingredients

  • 1 pound 93-percent lean ground turkey
  • 4 cloves garlic
  • 1 medium white or yellow onion
  • 2 medium carrots
  • 2 ribs celery
  • 6 cups shredded cabbage
  • 8 cups chicken broth
  • 3 tablespoons tomato paste
  • 1 small zucchini
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • to taste salt
  • to taste pepper

Instructions

  1. Heat a large pot over medium heat and spray with non-stick cooking spray.
  2. Add garlic, onions, carrots, and celery, cooking until the onions soften.
  3. Increase heat to medium-high and add the ground turkey, breaking it into crumbles as it cooks.
  4. Once the turkey is no longer pink, stir in the tomato paste and cook until it sticks to the pan.
  5. Add chicken broth, cabbage, basil, and oregano, bringing the mixture to a simmer.
  6. Simmer for 10 minutes, then add zucchini and cook for an additional 5 minutes until vegetables are softened.
  7. Season with salt and pepper to taste before serving.
