Ingredients

The salad

  • 1 cup dry bulgur
  • 5 cups flat parsley, finely chopped
  • 3 cups fresh mint, finely chopped
  • 2 pieces green onions, finely chopped
  • 3 pieces tomatoes, finely chopped
  • 2 cloves garlic, crushed

The dressing

  • ½ piece lemon, juiced
  • ½ tsp sumac
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Rinse the bulgur under running water and soak it in cold water for 3 to 4 hours, then drain well.
  2. Transfer the bulgur to a mixing bowl and add the chopped parsley, mint, green onions, and tomatoes.
  3. In a separate bowl, whisk together the garlic, lemon juice, sumac, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Refrigerate the tabouleh for a couple of hours to allow the flavors to develop.
