Ingredients

For the bulgur

  • ½ cup red bulgur
  • 1 cup water
  • Juice of 1 lemon
  • ¼ cup olive oil
  • ½ teaspoon ground coriander

For the salad

  • 3 cups finely chopped fresh parsley
  • ½ cup finely chopped fresh mint
  • 4 scallions
  • 2 cloves garlic
  • 3 firm Roma tomatoes
  • 2 Persian cucumbers
  • 2 tablespoons olive oil
  • Juice of ½ lemon
  • to taste salt and pepper

Instructions

  1. Cook the bulgur with water, lemon juice, olive oil, and coriander until the water is absorbed, then fluff with a fork.
  2. In a large bowl, combine the cooked bulgur with parsley, mint, scallions, garlic, tomatoes, cucumbers, olive oil, and lemon juice.
  3. Season the salad with salt and pepper to taste, adding more olive oil if desired.
