Instructions
- Cook the bulgur with water, lemon juice, olive oil, and coriander until the water is absorbed, then fluff with a fork.
- In a large bowl, combine the cooked bulgur with parsley, mint, scallions, garlic, tomatoes, cucumbers, olive oil, and lemon juice.
- Season the salad with salt and pepper to taste, adding more olive oil if desired.
