Ingredients

The salad

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 1 cup seeded diced tomatoes
  • 1 cup diced cucumber
  • ¼ cup sliced green onions
  • 1 cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint (optional)

The dressing

  • ¼ cup olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¾ teaspoon ground cumin

Instructions

  1. Cover bulgur wheat with boiling water in a bowl and let it sit covered for 45 minutes.
  2. After 45 minutes, strain the bulgur wheat to remove excess moisture.
  3. In a mixing bowl, combine bulgur wheat, diced tomatoes, cucumber, green onions, parsley, and mint if using.
  4. Add olive oil, lemon juice, salt, pepper, and cumin to the bowl.
  5. Toss everything together until well mixed and refrigerate for at least 1 hour before serving.
