Ingredients

The chicken

  • 6 pieces boneless skinless chicken thighs

The vegetables

  • 1 lb baby potatoes
  • 2 pieces bell peppers
  • 1 piece red or yellow onion

The seasoning

  • 1 tbsp olive oil
  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • ½ tsp kosher salt
  • 1 sprinkle black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Line a rimmed baking sheet with aluminum foil and lightly coat it with cooking spray.
  3. Arrange the chicken on the pan and surround it with halved baby potatoes, bell peppers, and onion pieces without overlapping.
  4. Drizzle olive oil over the chicken and vegetables, then season with smoked paprika, garlic powder, salt, and pepper.
  5. Bake in the oven for 30 minutes or until the vegetables are tender and the chicken is cooked through.
