Ingredients

The main ingredients

  • 4 pieces red potatoes, cubed
  • 2 cups spinach
  • 1 large red onion, chopped
  • 3 pieces Butcher Box chicken thighs

The seasonings

  • ½ teaspoon dried rosemary
  • ½ teaspoon black pepper
  • 2 tablespoons Kouzini Foods olive oil
  • ¼ teaspoon salt
  • 1 tablespoon Primal Palate new bae seasoning

Instructions

  1. Preheat the oven to 425°F.
  2. On a parchment-lined baking sheet, combine potatoes and onion with olive oil, salt, pepper, and rosemary, and coat well.
  3. Place chicken thighs on top and sprinkle with new bae seasoning.
  4. Bake for 35 minutes.
  5. Remove from the oven, place chicken on a plate, and set aside.
  6. Add spinach to the baking sheet to cover the potatoes and bake for an additional 8-10 minutes until wilted.
  7. Remove from the oven, mix the veggies, and place chicken back on top before serving.
