One Pan Cajun Chicken and Veggies

Ingredients

The chicken and veggies

  • 5 pieces bone-in skin-on chicken thighs
  • 2.5 lbs Yukon Gold potatoes, diced into 1-inch pieces
  • 4 Tbsp olive oil, divided
  • 1 piece bell pepper, diced into 1-inch pieces
  • ½ medium red onion, diced into 1-inch pieces
  • to taste salt and freshly ground black pepper
  • to taste chopped fresh parsley, for garnish (optional)

The cajun seasoning

  • tsp paprika
  • 2 tsp garlic powder
  • 2 tsp salt
  • tsp dried oregano
  • tsp dried thyme
  • 1 tsp onion powder
  • 1 tsp freshly ground black pepper
  • ½ - 1 tsp cayenne pepper, to taste

Instructions

  1. Preheat the oven to 425°F.
  2. Whisk together all cajun seasoning ingredients in a bowl.
  3. Place chicken skin side down on a baking sheet, drizzle with 1 Tbsp olive oil, and season with cajun seasoning.
  4. Turn the chicken over, drizzle with another 1 Tbsp olive oil, and season again.
  5. Toss the potatoes with 2 Tbsp olive oil and cajun seasoning, then place around the chicken on the baking sheet.
  6. Roast in the oven for 30 minutes.
  7. Add bell pepper and red onion to the baking sheet, toss with potatoes, and roast for an additional 10-15 minutes until everything is cooked through.
  8. Serve warm, garnished with parsley and additional seasoning if desired.
