One Pan Cajun Chicken and Veggies

The cajun seasoning

garlic powder

freshly ground black pepper

cayenne pepper, to taste
Instructions
- Preheat the oven to 425°F.
- Whisk together all cajun seasoning ingredients in a bowl.
- Place chicken skin side down on a baking sheet, drizzle with 1 Tbsp olive oil, and season with cajun seasoning.
- Turn the chicken over, drizzle with another 1 Tbsp olive oil, and season again.
- Toss the potatoes with 2 Tbsp olive oil and cajun seasoning, then place around the chicken on the baking sheet.
- Roast in the oven for 30 minutes.
- Add bell pepper and red onion to the baking sheet, toss with potatoes, and roast for an additional 10-15 minutes until everything is cooked through.
- Serve warm, garnished with parsley and additional seasoning if desired.
