One-Pot Cajun Chicken And Rice

Instructions
- 1. Pat the chicken thighs dry and rub them with cajun seasoning.
- 2. Heat 1 tablespoon of olive oil in a pot over medium-high heat and sear the chicken thighs until golden brown and partially cooked.
- 3. Remove the chicken and set aside.
- 4. In the same pot, heat the remaining olive oil and stir-fry the onions and garlic until lightly browned.
- 5. Add the rice, roasted red pepper, and chicken stock, stirring well and bringing to a boil.
- 6. Return the chicken to the pot, cover, and cook for 15-20 minutes until the rice is tender and the chicken is fully cooked.
- 7. Let the dish rest for 5 minutes, then top with olives, parsley, and lemon wedges before serving.
