Ingredients

  • 2 tablespoons olive oil
  • 4 pieces chicken thighs
  • 2 tablespoons cajun seasoning
  • 1 piece brown onion, chopped
  • 3 cloves garlic, minced
  • 1 cup basmati rice
  • cups roasted red pepper, drained
  • 2 cups low-sodium chicken stock
  • 1 cup pitted olives
  • 2 tablespoons fresh parsley, finely chopped
  • 1 piece lemon, cut into wedges for serving

Instructions

  1. 1. Pat the chicken thighs dry and rub them with cajun seasoning.
  2. 2. Heat 1 tablespoon of olive oil in a pot over medium-high heat and sear the chicken thighs until golden brown and partially cooked.
  3. 3. Remove the chicken and set aside.
  4. 4. In the same pot, heat the remaining olive oil and stir-fry the onions and garlic until lightly browned.
  5. 5. Add the rice, roasted red pepper, and chicken stock, stirring well and bringing to a boil.
  6. 6. Return the chicken to the pot, cover, and cook for 15-20 minutes until the rice is tender and the chicken is fully cooked.
  7. 7. Let the dish rest for 5 minutes, then top with olives, parsley, and lemon wedges before serving.
