Instructions
- Heat oil in the Instant Pot on Sauté mode and brown the sausage.
- Remove the sausage and set aside.
- Sauté onion, bell pepper, celery, and garlic in the remaining oil until softened.
- Add the remaining ingredients except for the rice and secure the lid.
- Cook on Manual High Pressure for 45 minutes, then let naturally release for 20 minutes.
- Mash the mixture to your desired texture and adjust salt as needed.
- Serve with a large scoop of rice and garnish with green onions and hot sauce if desired.
