Instructions
- Rinse the dry beans and brown rice, then set aside.
- Select 'sauté' on the Instant Pot and heat the olive oil.
- Add the diced onions, celery, and bell pepper, sprinkling with salt, and sauté until softened.
- Stir in the garlic, Cajun seasoning, thyme, and parsley, and sauté for an additional 30 seconds.
- Deglaze the pot with a splash of vegetable broth.
- Add the remaining ingredients: hot sauce, vegetable broth, water, red beans, brown rice, and bay leaves without stirring.
- Lock the lid and set the pressure valve to sealing, then cook on high pressure for 30 minutes.
- Allow the pressure to release naturally, then remove the lid.
- Test the beans for doneness and adjust seasonings, then stir in lemon juice and remove bay leaves.
