Ingredients

The beans and rice

  • 1 and ½ cups dry small red beans
  • 1 and ½ cups dry long grain brown rice

The vegetables

  • 1 medium yellow onion, diced
  • 1 cup diced celery (~3 stalks)
  • 1 medium green bell pepper, diced
  • 3-4 cloves garlic, minced
  • 2-3 sprigs green onion, sliced (for topping, optional)

The seasonings

  • ½ teaspoon salt (more to taste)
  • 1 and ½ tablespoons Cajun seasoning
  • 2 teaspoons dry thyme
  • 2 teaspoons dry parsley
  • 1 teaspoon hot sauce (add more for heat)
  • 3 bay leaves bay leaves

The liquids

  • 4 cups vegetable broth
  • 1 and ½ cups water

The finishing touches

  • 1 medium lemon, juiced

The oil

  • 1 tablespoon olive oil

Instructions

  1. Rinse the dry beans and brown rice, then set aside.
  2. Select 'sauté' on the Instant Pot and heat the olive oil.
  3. Add the diced onions, celery, and bell pepper, sprinkling with salt, and sauté until softened.
  4. Stir in the garlic, Cajun seasoning, thyme, and parsley, and sauté for an additional 30 seconds.
  5. Deglaze the pot with a splash of vegetable broth.
  6. Add the remaining ingredients: hot sauce, vegetable broth, water, red beans, brown rice, and bay leaves without stirring.
  7. Lock the lid and set the pressure valve to sealing, then cook on high pressure for 30 minutes.
  8. Allow the pressure to release naturally, then remove the lid.
  9. Test the beans for doneness and adjust seasonings, then stir in lemon juice and remove bay leaves.
