Ingredients

The salad

  • 1 cup black quinoa
  • 2 cups water
  • 2 lbs. frozen, shelled edamame
  • 4 green onions thinly sliced
  • ½ cup chopped peanuts (optional)

The dressing

  • ½ cup rice wine vinegar
  • 6 Tbsp. grapeseed oil
  • 2 Tbsp. flax oil
  • cup chopped fresh cilantro
  • 2 limes juiced
  • 1 Tbsp. honey
  • ¾ tsp. salt (plus more to taste)
  • 2 cloves garlic, minced

Instructions

  1. Cook the quinoa according to package instructions.
  2. While the quinoa is cooking, whisk together the vinegar, oils, lime juice, honey, salt, cilantro, and garlic to make the dressing.
  3. Prepare the edamame by steaming, microwaving, rinsing under hot water, or tossing with the hot quinoa.
  4. Combine the cooked quinoa, edamame, and green onions in a large bowl.
  5. Toss everything with the dressing and season to taste.
  6. Garnish with peanuts if desired and serve.
