Ingredients

The spice rub

  • 2 teaspoons paprika
  • teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste freshly ground black pepper

The chicken

  • 1 (4 to 5 pound) whole chicken

The oil

  • 2 tablespoons olive oil

Instructions

  1. Whisk together the paprika, thyme, garlic powder, onion powder, salt, and pepper in a small bowl.
  2. Remove giblets and truss the chicken for even cooking.
  3. For rotisserie: Skewer the trussed chicken, rub the spice mixture on the outside, and cook according to the rotisserie manufacturer's instructions.
  4. For oven: Preheat oven to 425°F, brush the chicken with olive oil, rub the spice mixture, and place in a roasting pan.
  5. Bake uncovered until the internal temperature reaches 165°F, about 70 to 80 minutes, basting every 15-20 minutes.
  6. Let the chicken rest for 10 minutes before carving.
