Instructions
- Whisk together the paprika, thyme, garlic powder, onion powder, salt, and pepper in a small bowl.
- Remove giblets and truss the chicken for even cooking.
- For rotisserie: Skewer the trussed chicken, rub the spice mixture on the outside, and cook according to the rotisserie manufacturer's instructions.
- For oven: Preheat oven to 425°F, brush the chicken with olive oil, rub the spice mixture, and place in a roasting pan.
- Bake uncovered until the internal temperature reaches 165°F, about 70 to 80 minutes, basting every 15-20 minutes.
- Let the chicken rest for 10 minutes before carving.
