Instructions
- 1. Cook the pasta in salted water according to package directions.
- 2. Heat olive oil in a large pan over medium-high heat.
- 3. Sprinkle Cajun seasoning over the shrimp and cook for 2-3 minutes per side until pink and opaque.
- 4. In a small pot, combine heavy cream, butter, salt, and pepper over medium-high heat and bring to a simmer, cooking until thickened.
- 5. Stir parmesan cheese into the sauce until melted.
- 6. Drain the pasta and toss it with the sauce, then arrange the shrimp on top.
- 7. Sprinkle with additional Cajun seasoning, diced tomatoes, and parsley before serving.
