Creamy Cajun Shrimp Pasta

The creamy Cajun Alfredo sauce

olive oil or butter

garlic, minced or pressed

all-purpose flour

chicken or vegetable stock

fire-roasted diced tomatoes, drained

freshly-grated Parmesan cheese

Instructions
- Cook the pasta according to package instructions until al dente, then drain.
- In a sauté pan, heat olive oil and sauté the shrimp, onions, and bell peppers until the shrimp are cooked through and veggies are softened.
- In a separate saucepan, heat oil or butter and sauté garlic until fragrant. Whisk in flour to make a roux, then add stock, milk, diced tomatoes, Parmesan, and Cajun seasoning. Cook until thickened.
- Combine the cooked pasta, sautéed veggies, shrimp, alfredo sauce, and spinach. Serve warm, garnished with green onions and extra Parmesan if desired.
