Ingredients

The pasta

  • 12 ounces uncooked pasta
  • 1 pound large raw shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 medium bell peppers, cored and thinly sliced
  • 1 small red onion, peeled and thinly sliced
  • 1 large handful baby spinach
  • optional thinly-sliced green onions
  • optional extra freshly-grated Parmesan cheese

The creamy Cajun Alfredo sauce

  • 2 tablespoons olive oil or butter
  • 4 large cloves garlic, minced or pressed
  • cup all-purpose flour
  • 1 cup chicken or vegetable stock
  • 3 cups milk
  • 1 15-ounce can fire-roasted diced tomatoes, drained
  • 1 cup freshly-grated Parmesan cheese
  • 2 tablespoons Cajun seasoning
  • to taste salt and freshly-cracked black pepper

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain.
  2. In a sauté pan, heat olive oil and sauté the shrimp, onions, and bell peppers until the shrimp are cooked through and veggies are softened.
  3. In a separate saucepan, heat oil or butter and sauté garlic until fragrant. Whisk in flour to make a roux, then add stock, milk, diced tomatoes, Parmesan, and Cajun seasoning. Cook until thickened.
  4. Combine the cooked pasta, sautéed veggies, shrimp, alfredo sauce, and spinach. Serve warm, garnished with green onions and extra Parmesan if desired.
