Ingredients

The pasta

  • 8 oz linguine pasta
  • 2 ½ cans Palmini linguine

The sauce and shrimp

  • 2 teaspoons olive oil
  • 1 lb raw shrimp
  • 1 tablespoon Cajun Seasoning
  • 4 oz andouille sausage
  • ½ cup chopped red peppers
  • ½ cup chopped green peppers
  • ½ cup chopped yellow or white onions
  • 1 cup fire roasted diced tomatoes
  • 1 tablespoon butter
  • ½ cup heavy whipping cream
  • ½ cup unsweetened almond milk
  • 4 oz cream cheese
  • ½ cup shredded Parmesan Reggiano Cheese

Instructions

  1. Boil the pasta according to package instructions.
  2. Coat the shrimp with Cajun seasoning and sauté in a hot skillet with olive oil until bright pink, then set aside.
  3. Sauté andouille sausage, onions, and peppers in the same pan until soft, then set aside.
  4. Melt butter in the pan, then add heavy cream, almond milk, cream cheese, remaining Cajun seasoning, and Parmesan cheese, stirring until melted.
  5. Add fire roasted tomatoes, shrimp, sausage, vegetables, and pasta to the sauce, stirring to combine and cook for a few minutes before serving.
