Instructions
- Boil the pasta according to package instructions.
- Coat the shrimp with Cajun seasoning and sauté in a hot skillet with olive oil until bright pink, then set aside.
- Sauté andouille sausage, onions, and peppers in the same pan until soft, then set aside.
- Melt butter in the pan, then add heavy cream, almond milk, cream cheese, remaining Cajun seasoning, and Parmesan cheese, stirring until melted.
- Add fire roasted tomatoes, shrimp, sausage, vegetables, and pasta to the sauce, stirring to combine and cook for a few minutes before serving.
