Instructions
- Cook the beef and onion in a large pot over medium-high heat until the beef is browned, then drain excess fat.
- Add garlic, chili powder, and cumin, stirring until fragrant.
- Mix in kidney beans, diced tomatoes with juice, tomato paste, green chiles with juice, macaroni, water, salt, and pepper.
- Cover and simmer until macaroni is almost cooked, about 10 minutes.
- Uncover and continue cooking until macaroni is tender and sauce thickens, about 3 to 5 minutes more.
- Season to taste with additional salt and pepper, then serve with cheese, sour cream, scallions, and hot sauce.
