Ingredients

The main dish

  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • 1 15 ounce can kidney beans, undrained
  • 1 15 ounce can diced tomatoes, undrained
  • 1 6 ounce can tomato paste
  • 1 4 ounce can diced green chiles, undrained
  • cups elbow macaroni, uncooked
  • cups water
  • to taste salt
  • to taste black pepper

For serving

  • 2 cups shredded cheese
  • to taste sour cream
  • to taste thinly sliced scallions
  • to taste hot sauce

Instructions

  1. Cook the beef and onion in a large pot over medium-high heat until the beef is browned, then drain excess fat.
  2. Add garlic, chili powder, and cumin, stirring until fragrant.
  3. Mix in kidney beans, diced tomatoes with juice, tomato paste, green chiles with juice, macaroni, water, salt, and pepper.
  4. Cover and simmer until macaroni is almost cooked, about 10 minutes.
  5. Uncover and continue cooking until macaroni is tender and sauce thickens, about 3 to 5 minutes more.
  6. Season to taste with additional salt and pepper, then serve with cheese, sour cream, scallions, and hot sauce.
