Ingredients

The main dish

  • 2 teaspoons olive oil
  • 1 pound ground beef
  • ½ cup onion
  • 1 teaspoon garlic
  • 2 teaspoons chili powder
  • 1 ½ teaspoons ground cumin
  • 14 ½ ounces diced tomatoes
  • 4 cups beef broth
  • 8 ounces tomato sauce
  • 15 ounces dark red kidney beans
  • 10 ounces elbow macaroni
  • 1 ¼ cups cheddar cheese
  • to taste salt and pepper

Optional toppings

  • to taste chopped cilantro
  • to taste diced tomato
  • to taste minced red onion

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the ground beef for 5-6 minutes, breaking it up as it cooks.
  3. Add the onion and cook for an additional 2-3 minutes.
  4. Stir in the garlic and cook for 30 seconds.
  5. Add chili powder, cumin, tomatoes, beef broth, tomato sauce, salt, pepper, kidney beans, and macaroni; stir to combine.
  6. Bring to a simmer, cover, and cook for 12-13 minutes until pasta is tender.
  7. Uncover and cook for an additional 3-4 minutes.
  8. Sprinkle cheese over the pasta and let it melt for 2-3 minutes.
  9. Top with optional cilantro, tomatoes, and onion before serving.
