Instructions
- Heat olive oil in a large pot over medium-high heat.
- Brown the ground beef for 5-6 minutes, breaking it up as it cooks.
- Add the onion and cook for an additional 2-3 minutes.
- Stir in the garlic and cook for 30 seconds.
- Add chili powder, cumin, tomatoes, beef broth, tomato sauce, salt, pepper, kidney beans, and macaroni; stir to combine.
- Bring to a simmer, cover, and cook for 12-13 minutes until pasta is tender.
- Uncover and cook for an additional 3-4 minutes.
- Sprinkle cheese over the pasta and let it melt for 2-3 minutes.
- Top with optional cilantro, tomatoes, and onion before serving.
