Ingredients

The cake

  • cups white whole wheat flour
  • 1 cup brown sugar
  • ¾ cup white sugar
  • ¾ cup canola oil
  • 1 teaspoon pumpkin pie seasoning
  • 1 teaspoon salt
  • ¾ cup pumpkin puree
  • ¾ cup milk
  • ¼ cup brewed espresso or strong coffee
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

The topping

  • 1 cup finely chopped pecans
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350ºF.
  2. In a stand mixer, combine flour, brown sugar, white sugar, canola oil, salt, and pumpkin pie seasoning until mixed.
  3. Reserve 1½ cups of the mixture for the topping and set aside.
  4. Add chopped pecans and cinnamon to the reserved mixture, stir, and set aside.
  5. In the stand mixer, add milk, pumpkin puree, espresso, egg, baking soda, and baking powder, mixing until smooth.
  6. Grease and flour a 9-inch springform pan or a 13x9-inch glass pan.
  7. Pour the cake batter into the prepared pan and spread the pecan topping evenly over the batter.
  8. Bake for 55-60 minutes for the springform pan or 35-40 minutes for the glass pan, until a toothpick comes out clean.
