Ingredients

The cake

  • 1 can pumpkin puree
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 ½ tablespoons pumpkin pie spice
  • ½ teaspoon salt
  • to taste dashes nutmeg and cloves (optional)

The frosting

  • ½ cup butter
  • ¾ cup brown sugar
  • 4 tablespoons cream or milk
  • ¼ teaspoon table salt
  • 1 teaspoon vanilla
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and prepare a rimmed baking sheet with nonstick spray.
  2. In a mixing bowl, combine pumpkin, sugar, oil, eggs, and vanilla and beat until smooth.
  3. In another bowl, mix flour, baking soda, pumpkin pie spice, and salt, then add to the pumpkin mixture and beat until combined.
  4. Pour the batter into the prepared pan and bake for 20-30 minutes, checking for doneness with a toothpick.
  5. While the cake is baking, prepare the frosting by melting butter, brown sugar, cream, and salt in a pot, then bring to a boil and simmer for 3 minutes.
  6. Remove from heat, let cool slightly, then mix in powdered sugar and vanilla until smooth.
  7. Frost the cake while it is still warm and garnish with a sprinkle of cinnamon.
