Ingredients

The salad

  • ¾ pound broccoli
  • ¾ pound cauliflower
  • 4 ounces cheddar cheese
  • ½ medium red onion
  • ½ cup shredded carrots
  • ½ cup toasted walnuts

The dressing

  • ½ cup mayonnaise
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. 1. Boil a large pot of water and prepare a bowl of ice water.
  2. 2. Cook the broccoli and cauliflower in boiling water for 2 minutes.
  3. 3. Transfer the vegetables to the ice water to stop cooking, then drain them.
  4. 4. In a small bowl, whisk together mayonnaise, balsamic vinegar, maple syrup, salt, and pepper.
  5. 5. In a large bowl, combine the drained broccoli and cauliflower with cheese, red onion, carrots, and walnuts.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Refrigerate for one hour before serving.
