Easy Chicken Gyros

Ingredients

Chicken Marinade

  • ½ cup plain yogurt
  • ¼ cup fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon finely minced garlic
  • 1 teaspoon coarse kosher salt
  • ¼ teaspoon coarsely ground black pepper
  • 1 ½ pounds boneless, skinless chicken breasts or thighs

Tzatziki Sauce

  • 1 medium English/seedless cucumber
  • 1 ½ cups plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 to 2 teaspoons finely minced garlic
  • pinch salt and pepper

Flatbread + Toppings

  • 6 pieces flatbread or pita bread
  • crumbled feta cheese
  • chopped tomatoes
  • lettuce
  • olives
  • red onions

Instructions

  1. 1. Whisk together all marinade ingredients and pour over chicken in a dish or bag; refrigerate for 1 to 2 hours.
  2. 2. Shred cucumber and remove excess liquid; combine with tzatziki ingredients and refrigerate.
  3. 3. Preheat grill or broiler to medium-high heat.
  4. 4. Cook chicken for 4-5 minutes per side until cooked through, then let rest.
  5. 5. Slice chicken and serve in flatbread or pita with tzatziki and desired toppings.
