Ingredients

The Chicken Marinade

  • 1 pound chicken tenders
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • ½ tablespoon fresh thyme, chopped
  • 1 tablespoon oregano, chopped
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon parsley, chopped
  • pinch nutmeg
  • ½ cup Greek yogurt
  • salt and pepper to taste

The Fillings

  • 4 pitas
  • 1 romaine lettuce, chopped
  • 1 large cucumber, seeded and sliced
  • 1 large tomato, sliced
  • 1 small red onion, sliced
  • 8 oz feta cheese crumbles, optional

Instructions

  1. Whisk together olive oil, garlic, lemon juice, lemon zest, thyme, oregano, rosemary, parsley, and nutmeg in a bowl.
  2. Lightly salt the chicken, coat with the marinade, add yogurt, and marinate overnight in the refrigerator.
  3. Preheat a grill pan on medium-high heat and grill the chicken for about 5 minutes on each side until fully cooked.
  4. Slice the cooked chicken and warm the pita bread.
  5. Spread Tzatziki sauce on the pita, add lettuce, cucumber, sliced chicken, tomatoes, onion, and feta cheese.
  6. Wrap the pita and serve.
