Greek Chicken Gyros

Ingredients

The chicken

  • 2-2.5 lbs boneless, skinless chicken thighs

The marinade

  • 1 tsp salt
  • ½ tsp pepper
  • 2 cloves garlic
  • 1 tbsp dried oregano
  • ½ lemon juiced
  • ½ tsp ground cumin
  • ½ cup plain Greek yogurt
  • 2 tbsp olive oil

For the chicken gyros bowl (optional)

  • 2 cups cooked rice
  • 1 cup halved baby tomatoes
  • 1 cup chopped cucumber
  • ½ cup black olives
  • ½ cup crumbled feta cheese
  • 2 cups thinly sliced romaine lettuce
  • ½ cup tzatziki
  • 2 pitas pita bread

Instructions

  1. Prepare the marinade by whisking together all marinade ingredients in a bowl.
  2. Add chicken thighs to the marinade, ensuring they are well coated, and refrigerate for at least 1 hour.
  3. Preheat the oven to 400°F (200°C).
  4. Skewer the marinated chicken thighs onto a vertical spit or an onion half as a base.
  5. Bake the chicken for 1 to 1½ hours until it reaches an internal temperature of 165°F (75°C).
  6. Let the chicken cool for 10-15 minutes before slicing.
  7. Serve the sliced chicken with pita, tzatziki, and vegetables or in a bowl.
