Homemade Potato Bread

Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- In a large bowl, whisk together the almond flour, tapioca flour, salt, baking soda, and onion powder until there are no clumps.
- In another bowl, whisk the eggs, milk, and olive oil, then add the vinegar and set aside.
- Slowly add the dry ingredients to the wet ingredients, stirring until a smooth batter forms, then fold in the mashed potatoes and herbs.
- Pour the batter into the greased loaf pan and add any optional toppings on top.
- Bake for 45 minutes, then cover loosely with foil and bake for another 10-15 minutes until a toothpick comes out clean.
- Allow the bread to cool completely in the pan before slicing.
