Ingredients

The bread

  • 1 medium Russet potato, peeled and cooked
  • cups blanched fine almond flour
  • ½ cup tapioca flour
  • ½ teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon onion powder
  • ¾ cup non-dairy milk (or milk of choice)
  • 2 large eggs
  • ¼ cup light olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon dried chives or basil (or herbs of choice)

Optional toppings

  • to taste fresh chopped herbs
  • to taste shredded parmesan cheese

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a large bowl, whisk together the almond flour, tapioca flour, salt, baking soda, and onion powder until there are no clumps.
  3. In another bowl, whisk the eggs, milk, and olive oil, then add the vinegar and set aside.
  4. Slowly add the dry ingredients to the wet ingredients, stirring until a smooth batter forms, then fold in the mashed potatoes and herbs.
  5. Pour the batter into the greased loaf pan and add any optional toppings on top.
  6. Bake for 45 minutes, then cover loosely with foil and bake for another 10-15 minutes until a toothpick comes out clean.
  7. Allow the bread to cool completely in the pan before slicing.
