Ingredients

The base

  • 1 cup cut and peeled potato
  • 4 cups water

The flavorings

  • ΒΌ cup blanched almond flour
  • 2-4 tablespoons maple syrup
  • a pinch sea salt
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Boil the potatoes until just soft, about 12 minutes.
  2. Drain the potatoes and add them to a blender with the remaining ingredients.
  3. Blend on high for about 5 minutes until well blended.
  4. Strain through a cheese cloth or nut milk bag to remove residue.
  5. Chill in the fridge for about an hour before serving.
